Gluten Free Almond Pastry

Crust

½ cup butter or margarine ( I like Earth Balance when making this non-dairy)

1 cup Auntie’s GF All-purpose Flour

2 TBSP Cold Water

 

Mix Flour and Butter or Margarine into a crumble. Blend in water. Divide in half and pat into two 12x3 rectangles about 3 inches apart on cookie sheet. Preheat oven to 350 Degrees

Set pan aside!

Puff Pastry

½ cup butter or margarine

1 cup water

1 cup Auntie’s GF All-purpose Flour

1 tsp almond flavoring

3 large eggs- room temperature

Bring butter and water to a rolling boil. Remove from heat. Add almond flavor and flour gradually. Return to stove. Stir vigorously over low heat for 1 minute until smooth and balls up. Remove from heat. Put the hot flour mixture into mixer. Use your paddle in your mixer. Add eggs, one at a time and beat until smooth between each egg. (You can do this by hand but it requires some muscle) Spread pastry dough evenly over crusts making sure that the dough is all the way to the edge of crusts. As it bakes it will puff up and move away from the edge. Bake for 60 minutes. It will be a lovely golden brown when done.

Glaze

2 TBSP butter or margarine, softened ( I like Earth Balance when making this non-dairy

1 ½ cup powdered sugar, sifted

1 tsp almond flavoring

¼-1/2 cup milk or coconut milk

1/3 cup roasted, slivered almonds

Mix butter and powdered sugar together. Slowly wisk milk and almond flavoring into powdered sugar until smooth.

Once pastry has cooled drizzle glaze over top and sprinkle slivered roasted almonds on the top
